Ingredients:

8 Green Onions
2 Garlic Cloves
2 tsp Cumin
3/4 cup Cilantro
1/2 cup Butter
3 tbsp Flour
3 cups Chicken Broth
1 1/2 cups Monterey Jack Cheese
4 cups Mexican Cheese Blend
8 oz Sour Cream
1 can (4 oz) Green Chilies
1 1/2 tsp Thyme
1/4 tsp Salt
1/4 tsp Pepper
12 Flour Tortillas

Instructions:

  1. Preparation:

    • Preheat your oven to 350Β°F (175Β°C).
    • Grease a 13×9-inch baking pan.
  2. Prepare the Filling:

    • In a mixing bowl, combine the cream cheese, diced onions, 1 1/2 cups of Mexican cheese blend, minced garlic cloves, 1/4 teaspoon of cumin, and chopped cilantro.
    • Stir in the cooked chicken or turkey until well combined. Set aside.
  3. Make the Cheese Sauce:

    • In a saucepan over medium heat, melt the butter.
    • Stir in the flour until smooth, then gradually add the chicken broth, stirring constantly.
    • Bring the mixture to a boil and cook, stirring, for about 2 minutes or until thickened.
    • Remove from heat and stir in the Monterey Jack cheese, sour cream, diced green chilies, thyme, salt, pepper, and the remaining cumin. Set aside.
  4. Layer the Lasagna:

    • Spread 1/2 cup of the cheese sauce evenly on the bottom of the prepared baking pan.
    • Place 6 flour tortillas over the sauce, tearing them if needed to fit the pan.
    • Spread 1/3 of the chicken or turkey mixture over the tortillas, followed by 1/4 of the cheese sauce.
    • Repeat the layers of tortillas, chicken or turkey, and cheese sauce twice more.
    • Finish with a layer of tortillas, the remaining cheese sauce, and sprinkle the remaining Mexican cheese blend on top.
  5. Bake:

    • Cover the pan with foil and bake in the preheated oven for 30 minutes.
    • Uncover and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
    • Let the lasagna stand for 5 minutes before serving to allow the flavors to meld together.
