- Bay leaves
- Lemongrass
- Kaffir lime leaves
- 1 sachet of coconut milk (such as Kara brand)
- Water
- Salt
- Sugar
- Cooking oil
Instructions:

-
Prepare the Anchovy and Noodles:
- Begin by frying the pickled anchovy slices until they are crispy and golden. Set aside.
- Cook the gomak noodles in boiling water with a bit of oil to prevent sticking. Drain and set aside.
-
Make the Spice Paste:
- Blend the kencur and ginger into a smooth paste.
- Heat some cooking oil in a pan and sauté the spice paste until it releases its fragrant aroma.
- Add the thinly sliced shallots and garlic to the pan and continue to sauté until they are softened and aromatic.
-
Add Aromatics:
- Incorporate the bay leaves, galangal slices, lemongrass, and kaffir lime leaves into the pan. Stir to combine the flavors.
-
Prepare the Soup Base:
- Add the green and red chilies to the pan, adjusting the quantity based on your preferred spice level.
- Pour in water and coconut milk, stirring to mix well.
- Season with salt and sugar to taste. Adjust the seasoning as needed.
-
Combine and Cook:
- Once the soup base is well-seasoned, add the fried anchovy slices and pieces of tempeh.
- Allow the mixture to simmer until the flavors meld and the soup is heated through, ensuring the tempeh and anchovy are thoroughly integrated into the broth.
-
Finish and Serve:
- Add the cooked gomak noodles to the pot, stirring gently to combine.
- Let everything simmer together for a few more minutes until the noodles are heated through and have absorbed some of the soup’s flavors.
-
Serving:
- Serve hot, garnished with additional fresh herbs or chilies if desired.
