Instructions

1. Prepare the Moong Dal Mixture

Start by soaking the green moong dal in water for about 4 to 6 hours. Once soaked, wash it thoroughly and peel it using your hands. If you prefer, you can keep the peel on, as it adds extra fiber. Next, place the moong dal in a mixer grinder, adding 1/2 glass of water and turmeric powder. Grind the dal into a smooth paste.

2. Cook the Moong Dal Mixture

In a deep frying pan or kadai, heat 1 tablespoon of oil. Once the oil is hot, add the ginger-garlic paste and cook for about 1 minute until fragrant. Then, add the asafoetida (hing), the ground moong dal paste, and salt. Stir continuously until the mixture thickens and takes on a halwa-like consistency, which should take about 8-10 minutes. Once done, remove the pan from heat and let the mixture cool.

3. Form the Balls

Once the mixture has cooled enough to handle, shape it into small, bite-sized balls (golis). Keep these aside. Next, steam the balls in a steamer for about 10-15 minutes until they are firm and cooked through. This step ensures that the moong dal balls maintain their shape and softness.

4. Prepare the Masala Gravy

In another pan, heat 1 tablespoon of oil. Add cumin seeds to the hot oil, allowing them to crackle and release their aroma. Once the cumin seeds splutter, add the chopped onions and cook until they soften and turn translucent, which will take about 3-4 minutes. Next, add the coriander powder, mango powder (amchur), red chili powder, and the steamed moong dal balls. Stir well to coat the balls in the spices.

5. Add Tomatoes and Final Spices

After mixing the spices and moong dal balls, add the chopped tomatoes. Cook everything together until the tomatoes become soft and the oil starts to separate from the masala, which should take another 5-7 minutes.

6. Finish the Dish

Once the tomatoes are cooked down and the gravy thickens, add lemon juice and garam masala powder. Stir everything together for a minute to combine the flavors, then turn off the heat.

7. Garnish and Serve
