Ikan Mujair Sambal Pete: A Spicy Indonesian Delight

Instructions

  1. Prepare the Fish: Start by frying the mujair fish in hot oil until they are golden brown and crispy. Once done, set them aside on a paper towel to absorb excess oil.

  2. Fry the Eggplant: In the same oil, fry the purple eggplants until they are slightly softened and golden. Remove and set aside.

  3. Sauté the Aromatics: In a clean pan, heat a bit of oil and add the pete, bay leaves, and kaffir lime leaves. Sauté until fragrant.

  4. Cook the Spice Paste: Add the spice paste (shallots, garlic, candlenuts, red curly chilies, and red bird’s eye chilies) to the pan, along with salt, black pepper, and sugar. Sauté the mixture until it changes color and becomes aromatic.
