Piadina with ‘Nduja, Sausage, and Cherry Tomatoes

Category: Main Dish
Serves: 2

This Piadina with ‘Nduja, Sausage, and Cherry Tomatoes is an indulgent and hearty Italian-style flatbread that brings together the rich flavors of spicy ‘nduja, savory sausage, and the burst of sweetness from cherry tomatoes. Perfect for a satisfying lunch or a light dinner, this dish combines the smoky richness of sausage and ‘nduja, balanced by the fresh tang of tomatoes, all encased in soft, warm piadina. The dish is simple yet packed with flavor, bringing a slice of Southern Italy to your table in just a few easy steps.

Ingredients

Ingredient Quantity
Piadine (Italian flatbread) 2
Sausage (preferably Italian) 400g
‘Nduja (spicy, spreadable sausage) 180g
Cherry tomatoes 200g
Extra virgin olive oil As needed

Instructions

  1. Prepare the Ingredients:
Start by cutting the cherry tomatoes in half, discarding the stem and seeds. Next, remove the casing from the sausage and crumble it into small pieces.

  2. Cook the Sausage:
Heat a drizzle of extra virgin olive oil in a skillet over medium heat. Once the oil is hot, add the crumbled sausage. Cook, stirring occasionally with a spoon, until the sausage is browned and cooked through. Remove the cooked sausage from the pan and set it aside.

  3. Warm the Piadine:
In the same pan, place the first piadina. Warm it for about 30 seconds on one side, then flip it over and heat for another 30 seconds on the other side. The goal is to get the flatbread slightly crispy and warm but not overly toasted.

  4. Assemble the Piadina:
Once the piadina is warm, spread half of the ‘nduja on one side of the flatbread. Then, add half of the cooked sausage on top. Distribute half of the halved cherry tomatoes over the sausage, ensuring an even spread.

  5. Repeat for the Second Piadina:
Warm the second piadina in the same manner as the first. Spread the remaining ‘nduja, then top with the rest of the sausage and tomatoes.

  6. Serve and Enjoy:
Cut each piadina in half and serve immediately while warm. This dish pairs beautifully with a light salad or a refreshing drink.
