Oven-Baked Ikan Kue (Yellowtail Scad)

Ingredients

  • 2 medium-sized yellowtail scad (ikan kue)
  • 3 teaspoons salt
  • 1 teaspoon flavor enhancer (such as MSG, optional)
  • 2 teaspoons ground black pepper

Spice Paste:

  • 3 large shallots
  • 1 large clove of garlic
  • 5 curly red chilies (cabe merah keriting)
  • 3 bird’s eye chilies (cabe rawit merah)

Instructions

  1. Clean the Fish:
    Begin by thoroughly cleaning the yellowtail scad. You can choose to cut the fish into pieces or leave them whole, depending on your preference.

  2. Prepare the Spice Paste:
    Blend the shallots, garlic, curly red chilies, and bird’s eye chilies until smooth.

  3. Cook the Spice Paste:
    Heat a pan over medium heat and sauté the blended spice paste until it becomes fragrant and well-cooked. Add the ground black pepper, salt, and the optional flavor enhancer. Stir well to combine all the flavors.

  4. Marinate the Fish:
    Once the spice paste is ready, turn off the heat and let it cool slightly. Add the cleaned fish to the pan and gently coat them with the spice paste. Ensure that the fish are well-covered with the paste. Let the fish marinate for approximately 10 minutes to absorb the flavors.

  5. Preheat the Oven:
    Preheat your oven to 180°C (350°F).

  6. Bake the Fish:
    Place the marinated fish on a baking tray and bake them in the preheated oven for 30 minutes.

  7. Serve:
    Once the fish is fully cooked, remove them from the oven. For an enhanced flavor experience, serve the oven-baked yellowtail scad with a side of soy sauce mixed with chopped shallots. Enjoy your flavorful and aromatic fish dish!
