Ikan Bawal Sauce Padang

Ingredients

Medium Bawal Fish 1, cleaned
Red Curly Chili Peppers 3, blended
Bird’s Eye Chili Peppers 3, sliced
Shallots 4 cloves, finely chopped
Garlic 1 clove, finely chopped
Medium Onion 1, sliced
Oyster Sauce 1 packet
Extra Spicy Chili Sauce 4 packets
Tomato Sauce 2 packets
Cornstarch 1 teaspoon
Water As needed
Cooking Oil As needed

Instructions

  1. Prepare the Fish: Clean the bawal fish thoroughly, then rub with salt and lime juice. Let it marinate for 10 minutes. Next, fry the fish until it’s half-dried, then remove and drain excess oil.

  2. Sauté Aromatics: In a pan, heat cooking oil and sauté the chopped shallots and garlic until fragrant. Add the blended red chili and sauté until cooked through.

  3. Create the Sauce: Stir in the sliced onion, oyster sauce, extra spicy chili sauce, and tomato sauce. Add enough water to achieve a desired consistency.

  4. Combine and Simmer: Gently add the fried fish into the sauce, ensuring it’s well-coated. Stir and let it simmer so the flavors meld together. Taste and adjust seasoning as needed, then add the sliced bird’s eye chili.

  5. Serve: Once everything is well combined and the flavors are balanced, remove from heat and serve hot.
