Ayam Saus Padang: A Spicy and Savory Indonesian Delight

Prepare to indulge in the vibrant flavors of Indonesian cuisine with this recipe for Ayam Saus Padang, a delectable chicken dish smothered in a spicy, savory sauce. Perfectly crispy chicken fillets are cooked to golden perfection and enveloped in a rich, aromatic sauce that’s both tangy and spicy. This dish is ideal for a hearty dinner or a special occasion when you want to impress with something truly flavorful. Here’s how to make it:

Ingredients:

  • 1 chicken breast fillet
  • 2 shallots
  • 1 garlic clove
  • 1/4 onion
  • A small piece of ginger
  • 4 bird’s eye chilies
  • 3 red chilies
  • 2 tablespoons sambal sauce
  • 1 tablespoon tomato sauce
  • 1 teaspoon oyster sauce
  • Salt, pepper, sugar, and chicken stock powder to taste
  • Chopped green onions for garnish

Instructions:

  1. Prepare the Chicken Fillet:

    • Season the chicken fillet with salt, pepper, and a light coating of flour. Heat oil in a pan and fry the chicken fillet until golden brown and crispy. Remove from the pan and set aside.
  2. Prepare the Aromatic Base:

    • Finely slice the shallots, garlic, onion, and ginger. Slice the bird’s eye chilies and red chilies as well.
    • In the same pan used for frying the chicken, add a little oil if needed and sauté the sliced shallots, garlic, onion, ginger, and chilies. Cook until they become fragrant and the onions are softened.
  3. Create the Sauce:

    • Add the sambal sauce, tomato sauce, and oyster sauce to the sautéed mixture. Stir well to combine the flavors.
    • Pour in a little water to create the sauce base. Stir and let it cook for a few minutes.
  4. Season the Sauce:

    • Season the sauce with salt, pepper, sugar, and chicken stock powder to taste. Adjust the seasoning to your preference, ensuring a balanced flavor.
  5. Combine Chicken and Sauce:

    • Return the fried chicken fillet to the pan. Stir to coat the chicken thoroughly with the sauce. Allow the mixture to simmer until the sauce thickens and coats the chicken well.
  6. Garnish and Serve:

    • Sprinkle chopped green onions over the dish for added freshness and a touch of color.
    • Serve the Ayam Saus Padang hot, and enjoy the blend of crispy chicken and spicy, tangy sauce.

This dish pairs wonderfully with steamed rice or noodles and makes for a truly satisfying meal. Enjoy the authentic taste of Indonesian flavors right at home!
