Telur Balado Padang

Ingredients:

  • 200 grams red chilies
  • 4 shallots
  • 1 clove garlic
  • 1 ripe tomato
  • 1/2 kg eggs (approximately 10 large eggs)
  • Salt to taste
  • Flavor enhancer (optional)
  • Oil for frying

Instructions:

  1. Prepare the Eggs: Begin by boiling the eggs until they are hard-boiled. Once cooked, peel the eggs and then fry them in oil until they turn a golden brown. Set aside.

  2. Prepare the Spice Paste: While the eggs are frying, prepare the spice paste. Blend the red chilies, shallots, garlic, and ripe tomato together until smooth. Add salt to taste and a small amount of flavor enhancer if desired. For a deeper flavor, you can pre-cook the spice paste by boiling it briefly before blending.

  3. Cook the Spice Paste: Heat some oil in a pan over medium heat. Add the blended spice paste to the hot oil and cook, stirring continuously, until the paste turns a deep red and the oil starts to separate from the paste. Be careful not to let the paste burn; you want it cooked through but not overly dry.

  4. Combine and Serve: Once the spice paste is ready, turn off the heat and add the fried eggs to the pan. Gently toss the eggs in the spicy mixture until they are well-coated.

  5. Enjoy: Your Telur Balado Padang is now ready to be served. Enjoy this flavorful and spicy dish with steamed rice or as a delicious accompaniment to your meal.

This classic Padang-style dish, known for its bold and spicy flavors, is a wonderful way to elevate simple eggs into a gourmet treat. Enjoy every bite of this rich and vibrant dish!
