Spicy Padang-Style Fried Gourami Fish

Gurame Saus Padang (Gourami with Padang Sauce)

Ingredients:

Main Ingredient:

  • 1 whole gourami fish

Sauce Ingredients:

  • 4 cloves garlic, finely chopped
  • 3 cloves shallots, finely chopped
  • 15 red chilies, ground (adjust to taste)
  • 7 bird’s eye chilies, thinly sliced (adjust to taste)
  • 1/2 onion, thinly sliced
  • Oyster sauce
  • Tomato sauce
  • Salt
  • Sugar
  • Pepper
  • 1 carrot, julienned (optional)
  • 1 tomato, diced (optional)
  • 1 stalk green onion, thinly sliced
  • 1 small piece of ginger, thinly sliced
  • Cornstarch
  • 250 ml water

Fish Frying Ingredients:

  • Rice flour
  • All-purpose flour
  • Salt
  • Lime/lemon juice
  • Vegetable oil

Instructions:

  1. Prepare the Fish:

    • Clean the gourami fish thoroughly. Rub the fish with lime or lemon juice and let it sit for a few minutes to remove any fishy odor.
  2. Frying the Fish:

    • Combine rice flour, all-purpose flour, and salt in a bowl. Coat the fish evenly with this flour mixture.
    • Heat vegetable oil in a frying pan until hot. Fry the fish until it is golden and cooked through. Remove and drain on paper towels. Ensure the oil is hot enough to prevent the fish from sticking.
  3. Making the Sauce:

    • Heat a little oil in a pan and sauté the chopped garlic and shallots until fragrant.
    • Add the ground red chilies and stir well.
    • Add the sliced onion, oyster sauce, tomato sauce, and ginger. Stir briefly and then pour in 250 ml of water.
    • Season with salt and sugar to taste.
    • Add the sliced bird’s eye chilies, green onion, and diced tomato. Stir well.
    • Dissolve some cornstarch in a small amount of water and add it to the sauce to thicken. If cornstarch is unavailable, simmer the sauce until it reduces and thickens naturally.
    • Taste the sauce and adjust the seasoning if necessary.
  4. Serving:

    • Place the fried gourami fish on a serving plate.
    • Pour the Padang sauce over the fish.
    • Serve immediately and enjoy your delicious Gurame Saus Padang!
