Green Chilli, finely chopped 1
Red Chilli sauce 1 tablespoon
Soy sauce 1 teaspoon
Roasted tomato pasta sauce 2 tablespoons
Black pepper powder, freshly crushed 1 teaspoon
Salt 1/2 teaspoon
Cabbage (Patta Gobi/ Muttaikose), shredded 1/2 cup
Cheese spread 4 tablespoons
Butter (Salted) 2 tablespoons
Oil 1-2 tablespoons

Instructions

  1. Prepare the Filling:

    • Heat oil in a wok over medium heat. Add the finely chopped garlic and green chili to the oil, and sauté for a minute until fragrant.
    • Add the sliced onions and bell peppers (capsicum) to the wok and cook until they soften and the raw smell of the onions disappears, about 2-3 minutes.
    • Stir in the red chili sauce, soy sauce, roasted tomato pasta sauce, salt, and freshly crushed black pepper. Mix well and let the sauce cook for another 30 seconds to thicken.
    • Add the cubed paneer to the sauce mixture. Stir to coat the paneer with the sauce and cook for an additional minute. Once the filling thickens slightly, remove from the heat and set aside to cool.
  2. Prepare the Tortilla:

    • Heat a nonstick pan or tawa over medium-high heat. Add a tablespoon of butter and let it melt. Once the pan is hot, place one tortilla in the pan.
    • Roast the tortilla until it turns golden brown on both sides, flipping occasionally. If needed, add more butter to prevent sticking.
    • Once done, remove the tortilla from the pan and place it on a plate.
  3. Assemble the Frankie:

    • Take a spoonful of cheese spread and place it in the center of the tortilla. Use a butter knife or spoon to spread it evenly across the surface.
    • Sprinkle shredded cabbage on top of the cheese spread.
    • Add 2-3 tablespoons of the prepared paneer filling horizontally across the center of the tortilla.
    • Carefully fold one corner of the tortilla and begin rolling it tightly. Ensure that the filling stays intact within the wrap. Secure the roll with a toothpick or wrap it in foil or tissue paper for easy handling.
  4. Serve:

    • Serve the Spicy Paneer Frankie hot, as a delightful evening snack or a quick meal. It pairs wonderfully with a hot cup of green tea, adding a refreshing balance to the spicy flavors of the Frankie.
