Cheese and Pepper Muffins Recipe

2 1/2 cups flour
1/4 cup yellow cornmeal
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup parmesan cheese
1/2 cup dry buttermilk
1/3 cup chopped green onion
1 tablespoon dried red pepper flakes
2 eggs
1 1/2 cups water
2 tablespoons vegetable oil

🔥 Instructions:

  1. For a nice gift, put the dry mix in a pretty container.

  2. Attach the recipe card with the following directions, or just use the directions to make them for yourself:

  3. Preheat your oven to 400°F (200°C). Grease muffin tins or line with paper liners.

  4. In a large bowl, combine the flour, yellow cornmeal, sugar, baking powder, baking soda, salt, parmesan cheese, dry buttermilk, chopped green onion, and dried red pepper flakes.

  5. In a separate bowl, whisk together the eggs, water, and vegetable oil.

  6. Make a well in the center of the dry ingredients mixture. Pour the wet ingredients into the well.

  7. Stir the ingredients together just until moistened. Do not overmix.

  8. Spoon the batter into the prepared muffin tins, filling each about 3/4 full.

  9. Bake in the preheated oven for 20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

  10. Remove the muffins from the oven and from the pan immediately.
