Spicy Patin Fish with Long Beans Stir-Fry

Ingredients:

  • Patin Fish: 500 grams, cleaned and cut into pieces
  • Long Beans: 200 grams, cut into bite-sized pieces
  • Corn: 1 ear, kernels removed
  • For the Spice Paste:
    • 3 cloves Garlic
    • 3 Shallots
    • 1 Red Chili (adjust to taste)
    • 1 Candlenut
  • For the Sliced Ingredients:
    • 1 Red Curly Chili (sliced)
    • 1 Tomato, chopped
    • 1-inch Galangal, sliced
  • Seasonings:
    • 50 ml Sweet Soy Sauce (Kecap Manis)
    • 1 Sachet Roico Chicken Flavor Seasoning
    • Salt and Pepper to taste
  • Additional:
    • 100 ml Water
    • Oil for frying and sautéing

Instructions:

  1. Prepare the Fish:

    • Heat oil in a frying pan over medium heat. Fry the cleaned and cut patin fish until golden brown and crispy. Remove the fish from the pan and set aside.
  2. Prepare Vegetables:

    • Cut the long beans into bite-sized pieces and remove the kernels from the corn. Rinse them thoroughly and set aside.
  3. Make the Spice Paste:

    • In a blender or food processor, combine the garlic, shallots, red chili, and candlenut. Blend until a smooth paste forms.
  4. Sauté the Spice Paste:

    • In a large pan or wok, heat a little oil over medium heat. Add the spice paste and sauté until fragrant.
  5. Add Sliced Ingredients:

    • Add the sliced red curly chili, chopped tomato, and galangal to the pan. Stir and cook until the tomato softens and the mixture becomes aromatic.
  6. Cook the Vegetables:

    • Add the long beans and corn to the pan. Pour in the water and stir well. Cook until the vegetables are tender but still crisp.
  7. Season the Dish:

    • Stir in the Roico chicken seasoning and sweet soy sauce. Mix well to combine the flavors.
  8. Combine with Fish:

    • Gently add the fried patin fish back into the pan. Stir carefully to coat the fish with the sauce and vegetables. Adjust the seasoning with salt and pepper if needed.
  9. Serve:

    • Cook for a few more minutes until everything is well combined and heated through. Serve the spicy patin fish with long beans hot, alongside steamed rice.
