Pepes Tahu with Beef Short Ribs Recipe
Ingredients:
- 20 small white tofu cubes
- 500 grams beef short ribs
- 1 red chili pepper
- 6 whole bird’s eye chilies (keep them whole)
- 1 onion
- 1 stalk green onion (scallion)
- 3 shallots
- 2 garlic cloves
- 1 packet Kara coconut milk
- 5 bay leaves
- Ground black pepper
- Palm sugar (or substitute with brown sugar)
- Seasoning (optional)
- Salt to taste
- Banana leaves
- Toothpicks
Instructions:
-
Prepare the Aromatics: Slice the onion, red chili pepper, shallots, and garlic cloves. Combine these ingredients with the whole bird’s eye chilies in a bowl.
-
Prepare the Tofu and Beef: Mash the tofu cubes until they are well broken down. Cut the beef short ribs into small dice. Add the diced beef to the mashed tofu mixture.
-
Combine Ingredients: Mix the sliced aromatics and whole chilies into the tofu and beef mixture. Add coconut milk, bay leaves, ground black pepper, palm sugar, seasoning (if using), and salt to taste. Mix thoroughly until all ingredients are well combined.
-
Prepare the Banana Leaves: Cut the banana leaves into squares large enough to wrap the tofu mixture. Rinse the banana leaves in warm water and pat them dry.
-
Wrap the Pepes: Take a portion of the tofu and beef mixture and place it in the center of each banana leaf square. Fold the edges of the banana leaf over the mixture to form a parcel, and secure the packet with toothpicks.
-
Steam the Pepes: Preheat a steamer until hot. Place the wrapped parcels in the steamer, ensuring they are not overcrowded. Steam for about 30-40 minutes, or until the tofu and beef are fully cooked and the flavors have melded.
-
Serve: Carefully remove the pepes from the steamer. Unwrap the banana leaves and serve the Pepes Tahu with steamed rice or as a side dish.
Enjoy your flavorful Pepes Tahu with Beef Short Ribs, a delightful and aromatic dish that combines the rich taste of beef with the delicate flavor of tofu, all wrapped in fragrant banana leaves.
