Prepare the Cauliflower:
In a saucepan, bring some water to a boil. Add the cauliflower florets and cook for about 10 minutes. After 10 minutes, turn off the heat and let the cauliflower remain in the hot water for another 2 minutes. Then, discard the water and set the cauliflower aside. -
Prepare the Tempering (Tadka):
In a pan, heat the oil over medium heat. Once hot, add mustard seeds (rai) and allow them to splutter for about 10 seconds.
Next, add the dry red chili (broken in half) and split black urad dal. SautΓ© for 20 seconds, then add the curry leaves and garlic. Stir the mixture and cook for another minute. -
Cook the Vegetables:
Add the sliced onions to the pan and cook until they become soft and translucent. Once the onions are tender, add the prepared cauliflower to the pan and stir well to combine. -
Add the Spices:
Now, add black pepper powder, cumin powder, red chili powder, and salt to taste. Mix all the ingredients thoroughly and cook for another 2 minutes to allow the flavors to meld together. -
Finish and Garnish:
Turn off the heat, and garnish the dish with freshly chopped coriander leaves. -
