Cuisine: Sri Lankan
Course: Side Dish
Diet: Vegetarian
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Servings: 4-6

Ingredients

Ingredient Quantity
Pineapple (finely chopped) 2 cups
Oil 1 teaspoon
Cumin seeds (Jeera) 1/2 teaspoon
Cinnamon Stick (Dalchini) 1-inch piece
Ginger (finely grated) 1-inch piece
Green Chillies (finely chopped) 2
Turmeric powder (Haldi) 1/4 teaspoon
Kashmiri Red Chilli Powder 1/4 teaspoon
Cumin powder (Jeera) 1/4 teaspoon
Sugar 2 teaspoons
Lemon (juice extracted) 1
Salt To taste

Instructions

  1. Prepare the Pineapple
Start by peeling and finely chopping the ripe pineapple. Set aside. Prepare the other ingredients, including grating the ginger, chopping the green chilies, and extracting the lemon juice.

  2. Heat the Spices
In a heavy-bottomed pan, heat the oil over medium heat. Once hot, add the cumin seeds, cinnamon stick, grated ginger, and chopped green chilies. Allow them to splutter and release their fragrance, cooking for about 1 minute.

  3. Cook the Pineapple
Add the chopped pineapple to the pan and stir well, making sure the pineapple is coated with the fragrant spices. Sprinkle a pinch of salt over the mixture and cover the pan. Let the pineapple cook for 5-10 minutes on medium heat, stirring occasionally. The pineapple should soften and release its juices. If needed, add a tablespoon or two of water to ensure the mixture doesnโ€™t dry out.

  4. Add Spices and Sugar
Once the pineapple is softened, add the turmeric powder, cumin powder, Kashmiri red chili powder, and sugar. Stir well to ensure the pineapple is coated with the spices. Squeeze in the fresh lemon juice and mix everything together.

  5. Simmer to Thicken
Lower the heat and let the chutney simmer for 10-12 minutes. Stir occasionally to prevent sticking. During this time, the chutney will thicken and take on a jam-like consistency. The pineapple will absorb all the flavors of the spices.

  6. Adjust Seasoning
Taste the chutney and adjust the seasoning if necessary. If you prefer more heat, add extra chili powder or green chilies. You can also increase the sugar if you like a sweeter chutney.

  7. Serve
Once the chutney has thickened to your liking, turn off the heat. Allow it to cool slightly before serving. This chutney pairs perfectly with parathas, dosas, rice, or any traditional Indian or Sri Lankan meal. Serve it as a delightful side dish alongside a Sri Lankan Veechu Parotta or Ceylon Parotta, and complete the meal with a traditional dessert like Paruppu Payasam.
