Recipe Instructions:
-
Brown and “crumble” sausage: In a large pot or Dutch oven over medium heat, cook the pork sausage until it’s nicely browned and crumbled, breaking it up with a spoon as it cooks.
-
Add diced onion & pepper: Once the sausage is browned, add in the diced yellow onion and green bell pepper. Stir everything together and sauté until the onions are translucent and the peppers are tender.
-
Incorporate tomatoes, beans, tomato sauce, and seasonings: Add the diced tomatoes, chili beans, tomato sauce, garlic powder, salt, cumin, chili powder, and sugar to the pot. Stir well to combine all the ingredients.
-
Pour in water: Pour in 2 2/3 – 3 1/2 cups of water, depending on how thick you like your soup. Stir everything together.
-
Bring to a boil, then simmer: Increase the heat and bring the soup to a boil. Once boiling, reduce the heat to low and let the soup simmer, covered, for about 20 minutes. This allows all the flavors to meld together beautifully.
-
Serve: Ladle the hot soup into bowls and serve immediately.
-
Enjoy with cornbread: This soup pairs wonderfully with a side of cornbread. Serve it up, and watch it disappear!
Recipe Notes:
- Total preparation time: Although the cook time is only 20 minutes, allow about 30 minutes in total for prep work like dicing the vegetables and browning the meat.
- Yield: This recipe makes about 2 quarts of soup, which easily serves 4 people with seconds.
- Customization: Feel free to adjust the seasonings to your taste. You can make it spicier by adding more chili powder or adding some red pepper flakes if you like it hot!
This Quick Chili Soup recipe is a lifesaver on busy weeknights when you crave something comforting and satisfying without spending hours in the kitchen. Give it a try, and enjoy a bowl of warm, flavorful goodness!
