Sambal Kentang with Beef Meatballs

Ingredients:

  • 1/2 kg potatoes, peeled and diced
  • 1/2 pack beef meatballs (bakso sapi)
  • 2 bay leaves (daun salam)
  • Palm sugar (gula merah), to taste
  • Ground Spices:
    • 6 shallots
    • 4 cloves garlic
    • 1/4 kg red chili peppers (cabai merah)
    • 4 bird’s eye chilies (cabe rawit)
    • 1/2 tomato

Instructions:

  1. Prepare the Potatoes: Peel the potatoes and cut them into small cubes. Heat oil in a pan and fry the potato cubes until they are golden and crispy. Remove and drain on paper towels.

  2. Make the Spice Paste: In a blender or food processor, blend the shallots, garlic, red chili peppers, bird’s eye chilies, and tomato into a smooth paste.

  3. Cook the Spice Paste: Heat a small amount of oil in a pan over medium heat. Add the blended spice paste and sauté until fragrant and the oil begins to separate from the paste. Season with a pinch of salt and a bit of palm sugar to balance the flavors. Toss in the bay leaves.

  4. Combine Ingredients: Add the beef meatballs and fried potatoes to the pan. Stir well to ensure the potatoes and meatballs are coated with the spice paste. Cook for a few minutes, allowing the flavors to meld.

  5. Adjust Seasoning: Taste and adjust the seasoning as needed, adding more salt or palm sugar if necessary.

  6. Serve: Transfer the dish to a serving plate and enjoy your Sambal Kentang with Beef Meatballs hot, accompanied by steamed rice or as a flavorful side dish.
