Spicy Potato Samosa Filling Recipe

Ingredients:

  • 3 boiling potatoes
  • 1 1/2 tsp salt
  • 1/2 tsp red chili pepper
  • 1/2 tsp black pepper
  • 4 onions
  • 1 cup peas
  • 1-inch ginger
  • 1 green chili pepper
  • 1/4 cup fresh cilantro
  • 3 tbsp water
  • 1 tsp garam masala
  • 1 tsp cumin seed
  • 1 tsp lemon juice
  • 4 tbsp oil

Instructions:

  1. Boil and Dice Potatoes:

    • Boil the potatoes until tender, then peel and dice them into 1/4 inch pieces.
  2. Prepare Spice Mix:

    • In a hot cast iron frying pan, add cumin and coriander seeds. Toast for about 30 seconds until fragrant. Remove from heat and grind into a fine powder.
  3. Sautรฉ Onion:

    • Heat 4 tablespoons of oil in a frying pan. Sautรฉ the onions until they turn light brown.
  4. Add Aromatics:

    • To the sautรฉed onions, add peas, ginger, green chili, red chili powder, fresh cilantro, salt, black pepper, and 3 tablespoons of water. Cover and simmer until the peas are tender, about 5 minutes.
  5. Combine Ingredients:

    • Add more water if needed, then incorporate the diced potatoes, ground coriander and cumin seeds, lemon juice, and garam masala. Stir-fry the mixture for 3-5 minutes until well combined and fragrant.
  6. Cool Filling:

    • Allow the spicy potato filling to cool completely before using it to fill samosas.
