Ingredients:
- 1 cup Basmati rice
- 2 Bay leaves (tej patta)
- 2 Onions
- 5 cloves Garlic
- 1/2 inch Ginger
- 1 teaspoon Soy sauce
- 1/2 Carrot (Gajjar)
- 1 teaspoon Green Chilli Sauce
- 1/2 Red, Yellow, or Green Bell Pepper (Capsicum)
- 1 teaspoon Roasted tomato pasta sauce
- 8 Prawns, marinated
- 1 tablespoon Butter (Salted)
- 2 tablespoons Oil (for frying)
- 2 Cloves (Laung)
- 4 Whole Black Peppercorns
- 1/2 teaspoon Cinnamon Powder (Dalchini)
- 1/2 teaspoon Black pepper powder
- 1 tablespoon Coriander (Dhania) Leaves, chopped (for garnish)
- Salt, to taste
For Marinating the Prawns:
- 1/2 teaspoon Red Chilli powder
- 1/2 teaspoon Turmeric powder (Haldi)
- Salt, to taste

Instructions:

Begin by marinating the prawns. In a bowl, mix the red chili powder, turmeric powder, and salt with the prawns. Let it marinate for 30 minutes.

Scrape the outer skin of the carrot and slice it into fine, long pieces. Chop the bell pepper into thin long slices.

To prepare the rice, bring a saucepan of water to a boil. Add bay leaves, peppercorns, cloves, and a pinch of salt. Add the basmati rice and cook until it is par-boiled. Add 1 teaspoon of oil to prevent the rice from becoming sticky. Once cooked, drain the rice and spread it on a colander to allow it to dry for 30 minutes. Sprinkle with cinnamon powder and black pepper powder.

In a kadai (wok), heat some oil and fry the onions until they turn pinkish. Add the garlic and ginger paste and fry for a few minutes until fragrant.

Add the chopped veggies (carrot, bell pepper) and fry for a few more minutes. Then, cut the marinated prawns into 2-3 pieces and add them to the wok. Fry for about 8 minutes.

After the prawns are cooked, add the soy sauce, green chili sauce, and roasted tomato pasta sauce. Let it cook for another minute. Season with salt.

Add the prepared basmati rice into the kadai, mixing gently to avoid breaking the rice grains. Stir in the butter, ensuring it melts evenly throughout the rice.

Turn off the heat and garnish with chopped coriander leaves.
