Instructions

  1. Prepare the Arbi: Begin by thoroughly washing the arbi under running water. Once washed, peel the skin off and cut the arbi into thin, long pieces. Be careful while handling arbi, as it can release a sticky sap—consider wearing gloves if desired.

  2. Heat Ghee and Temper Spices: Heat ghee in a large pan over medium heat. Once the ghee is hot, add cumin seeds and allow them to sizzle for about 15 seconds, releasing their aroma.

  3. Cook Green Chilies and Onion: Add the sliced green chilies to the pan and sauté for a minute. Then, add the thinly sliced onion to the pan. Stir and cook until the onion becomes soft and translucent, which should take about 5-7 minutes.

  4. Cook the Arbi: Now, add the sliced arbi to the pan. Stir it well to mix with the onion and spices, then cook for approximately 4 minutes, allowing the arbi to soften and absorb the flavors.

  5. Add the Spices: Lower the heat and sprinkle in the red chilli powder, turmeric powder, and salt. Stir well to evenly coat the arbi with the spices. Cover the pan and cook the arbi on low heat for 20-25 minutes, stirring occasionally to prevent it from sticking to the bottom. You want the arbi to become soft and tender.

  6. Finish with Garam Masala and Amchur: Once the arbi is cooked through, add the garam masala powder and dried mango powder (amchur). Stir everything together, allowing it to cook for an additional minute. This last step adds a beautiful tangy and aromatic finish to the dish.

  7. Garnish and Serve: Turn off the heat and garnish with freshly chopped coriander leaves. Serve the Punjabi-style Arbi hot with a side of panchmel daal, palak raita, and soft phulkas or steamed rice for a wholesome and delicious lunch.
