Ingredients:

  • 15 cloves Garlic
  • 6 Green Chillies
  • 6 sprigs Coriander (Dhania) Leaves, finely chopped
  • 2 cups Makki Ka Atta (Yellow Corn Meal Flour)
  • 1 teaspoon Baking soda
  • Salt, to taste
  • Water, as required

Preparation Time: 10 minutes
Cooking Time: 30 minutes

Instructions:

  1. Start by crushing the garlic, coriander leaves, and green chillies together in a mortar and pestle to form a fine paste.
  2. In a mixing bowl, combine the maize flour (Makki Ka Atta), the freshly crushed garlic-chili-coriander mixture, baking soda, and salt.
  3. Gradually add water and knead the mixture into a smooth dough, similar in texture to dough for South Indian vadas.
  4. Shape the dough into small, round dhoklas.
  5. Steam the dhoklas in an idli steamer for about 30 minutes or until they are cooked through.
  6. Serve the Rajasthani Makki Ka Chatpata Dhokla hot, topped with a dollop of ghee or paired with green chutney.
