Rajasthani Kande Ki Sabzi is a flavorful side dish featuring onions cooked in a spicy yogurt-based curry. This simple dish is made with easily accessible ingredients and can be prepared quickly. Perfect for lunch or dinner, it is a great option when you need a fast yet delicious side to complement your meal.

Ingredients:

  • 2 Onions, sliced
  • 1 tablespoon Ghee
  • 1 teaspoon Cumin seeds (Jeera)
  • 1/2 teaspoon Ginger, finely ground
  • 1/2 teaspoon Garlic, finely ground
  • 1/4 cup Curd (Dahi / Yogurt)
  • 2 tablespoons Water
  • Green Chillies, chopped (to taste)
  • 1 teaspoon Coriander Powder (Dhania)
  • 1/2 teaspoon Turmeric Powder (Haldi)
  • Red Chilli Powder, to taste
  • Salt, to taste
  • Spring Onion (Bulb & Greens), for garnish (optional)

Preparation Time: 15 minutes
Cook Time: 15 minutes

Instructions:

  1. In a bowl, mix yogurt with water and whisk until well combined.
  2. Add coriander powder, turmeric powder, red chili powder, and salt to the yogurt mixture. Stir well.
  3. Heat ghee in a pan over medium flame. Once hot, add cumin seeds and allow them to sizzle.
  4. Add ginger, garlic, and green chilies to the pan. Sauté for about a minute, stirring occasionally.
  5. Add the sliced onions and mix well. Continue to cook until the onions turn a beautiful brown color.
  6. Add the yogurt mixture and increase the heat to medium-high. Allow the onions to cook until the moisture is absorbed.
  7. Transfer the dish to a serving bowl and garnish with spring onions (optional).
  8. Serve hot with phulka, dal, and pulao for a complete and satisfying weekday lunch.
