Ingredients:
- 2 Onions, sliced
- 1 tablespoon Ghee
- 1 teaspoon Cumin seeds (Jeera)
- 1/2 teaspoon Ginger, finely ground
- 1/2 teaspoon Garlic, finely ground
- 1/4 cup Curd (Dahi / Yogurt)
- 2 tablespoons Water
- Green Chillies, chopped (to taste)
- 1 teaspoon Coriander Powder (Dhania)
- 1/2 teaspoon Turmeric Powder (Haldi)
- Red Chilli Powder, to taste
- Salt, to taste
- Spring Onion (Bulb & Greens), for garnish (optional)

Instructions:
- In a bowl, mix yogurt with water and whisk until well combined.
- Add coriander powder, turmeric powder, red chili powder, and salt to the yogurt mixture. Stir well.
- Heat ghee in a pan over medium flame. Once hot, add cumin seeds and allow them to sizzle.
- Add ginger, garlic, and green chilies to the pan. Sauté for about a minute, stirring occasionally.
- Add the sliced onions and mix well. Continue to cook until the onions turn a beautiful brown color.
- Add the yogurt mixture and increase the heat to medium-high. Allow the onions to cook until the moisture is absorbed.
- Transfer the dish to a serving bowl and garnish with spring onions (optional).
- Serve hot with phulka, dal, and pulao for a complete and satisfying weekday lunch.
