Cuisine: Indian
Course: Dinner
Diet: Vegetarian

Ingredients

  • 1 cup rice
  • 1/4 cup kidney beans (rajma), soaked for 8 hours
  • 2 cloves garlic, finely chopped
  • 2 cloves
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 2 cardamom pods
  • 1 tsp black pepper powder
  • 1 tbsp ghee
  • Salt, to taste

Preparation Time: 20 minutes
Cooking Time: 45 minutes

Instructions

  1. Start by soaking the kidney beans (rajma) for 8 hours. After soaking, pressure cook the beans with water and salt for 30 minutes. Once the pressure releases, drain the beans and set them aside.
  2. Wash the rice thoroughly and set it aside as well.
  3. In a mortar and pestle, grind the cardamom, cinnamon, and cloves into a fine powder. Set this spice mix aside.
  4. Heat ghee in a saucepan over medium heat. Add the finely chopped garlic and ground spices, and sauté for 2-3 minutes until fragrant.
  5. Add the washed rice and cooked kidney beans to the saucepan. Stir well.
  6. Sprinkle black pepper powder, salt, and pour in 1 1/2 cups of water. Bring the mixture to a boil.
  7. Once it boils, reduce the heat to low, cover the pan, and cook until the rice is fully cooked, about 15-20 minutes.
  8. Once done, turn off the heat and let it sit, covered, for an additional 10 minutes to allow the flavors to meld.
  9. Serve your Spiced Rajma Pulao hot, accompanied by Tomato Onion Cucumber Raita and Papad for a delightful dinner.

Enjoy this delicious, protein-rich pulao that is perfect for any occasion!
