Instructions:

  1. Prepare the Tempering:
In a pan, heat some oil and add fenugreek seeds. Fry them on low heat until they turn golden brown. Once done, allow them to cool down.

  2. Grind the Chutney:
In a mixer grinder, add the raw tomatoes, roasted fenugreek seeds, salt, and jaggery. Grind these ingredients into a smooth paste. Set it aside.

  3. Prepare the Tadka (Tempering):
In the same pan, heat some oil and add mustard seeds. Let them splutter for about 10 seconds. Next, add the curry leaves and cook for another 10 seconds.

  4. Cook the Onion:
Add finely chopped onions to the pan and sauté them until they become soft and translucent.

  5. Combine the Chutney:
Add the ground tomato paste to the pan along with 1/4 cup of water. Mix everything well, and cook for about 5–7 minutes to allow the flavors to blend together.

  6. Serve:
Once the chutney thickens and becomes aromatic, remove it from the heat. Serve this tangy raw tomato chutney with your favorite South Indian dishes like idli, dosa, or even a hot bowl of sambar.
