Prepare the Tempering:
In a pan, heat some oil and add fenugreek seeds. Fry them on low heat until they turn golden brown. Once done, allow them to cool down. -

In a mixer grinder, add the raw tomatoes, roasted fenugreek seeds, salt, and jaggery. Grind these ingredients into a smooth paste. Set it aside. -
Prepare the Tadka (Tempering):
In the same pan, heat some oil and add mustard seeds. Let them splutter for about 10 seconds. Next, add the curry leaves and cook for another 10 seconds. -
Cook the Onion:
Add finely chopped onions to the pan and sauté them until they become soft and translucent. -
Combine the Chutney:
Add the ground tomato paste to the pan along with 1/4 cup of water. Mix everything well, and cook for about 5–7 minutes to allow the flavors to blend together. -
Serve:
