Ingredients:
- 8 corn tortillas
- 1 1/2 cups cooked white rice
- 2 cups colby cheese, shredded
- 1/2 cup colby-monterey jack cheese, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) whole kernel corn, drained
- 1 can (4 oz) green chilies
- 1/4 cup green chili peppers, chopped
- 1 cup chicken broth or water

Preheat Oven: Preheat your oven to 425°F (220°C).

Prepare Tortillas: Wrap the corn tortillas between two damp paper towels and microwave on High for 30 seconds. Carefully remove them from the microwave (they will be hot).

Assemble Enchiladas: Lightly spray a 13x9x2-inch baking pan with non-stick cooking spray. Place one tortilla in the prepared pan. Spoon about 2 tablespoons of chicken and 3 tablespoons of rice along the center of the tortilla, then roll it up and leave it seam-side down in the pan. Repeat this process for the remaining tortillas.

Add Beans and Corn: Pour the black beans evenly over the top of the enchiladas, followed by the corn.
