Gourmet Enchiladas Recipe 🌶️

Description: Not quite traditional, but equally delicious, these enchiladas substitute rice for beans. Choose your own chile to control the “heat”! Guaranteed authentically New Mexican! High altitude tested.

Ingredients:

  • 8 corn tortillas
  • 1 1/2 cups cooked white rice
  • 2 cups colby cheese, shredded
  • 1/2 cup colby-monterey jack cheese, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (4 oz) green chilies
  • 1/4 cup green chili peppers, chopped
  • 1 cup chicken broth or water

Instructions:

  1. Preheat Oven: Preheat your oven to 425°F (220°C).

  2. Prepare Tortillas: Wrap the corn tortillas between two damp paper towels and microwave on High for 30 seconds. Carefully remove them from the microwave (they will be hot).

  3. Assemble Enchiladas: Lightly spray a 13x9x2-inch baking pan with non-stick cooking spray. Place one tortilla in the prepared pan. Spoon about 2 tablespoons of chicken and 3 tablespoons of rice along the center of the tortilla, then roll it up and leave it seam-side down in the pan. Repeat this process for the remaining tortillas.

  4. Add Beans and Corn: Pour the black beans evenly over the top of the enchiladas, followed by the corn.

  5. Add Cheese: Sprinkle both types of shredded cheese evenly over the top of the enchiladas.

  6. Top with Chilies: Distribute the chopped green chilies and green chili peppers over the cheese.

  7. Pour Broth/Water: Evenly pour the chicken broth or water over all the enchiladas in the pan.

  8. Bake: Place the pan in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly, and the liquid in the pan is absorbed.

  9. Serve: Once baked, remove the enchiladas from the oven. Serve hot with optional toppings such as non-fat sour cream, additional shredded cheese, shredded lettuce, chopped tomatoes, and chopped onions.
