This hearty and wholesome Spicy Roasted Pumpkin Carrot Soup is a perfect blend of sweet and savory flavors, making it a delightful choice for a nutritious appetizer. Roasting the pumpkin and carrots brings out their natural sweetness, and the addition of aromatic spices like cinnamon and a touch of green chili adds an intriguing burst of warmth. Ideal for cozy dinners, this soup pairs beautifully with a fresh salad and artisan bread.

Ingredients:

Ingredient Quantity
Kaddu (Parangikai / Pumpkin) 500 grams, cubed
Carrot (Gajjar) 2, cut into chunks
Garlic 2 cloves
Vegetable Stock 1 cup
Milk 1/2 cup
Cinnamon Powder (Dalchini) 1/4 teaspoon
Brown Sugar (Demerara Sugar) 2 teaspoons
Salt and Pepper to taste
Extra Virgin Olive Oil 2 teaspoons

Preparation Time:

  • 10 minutes

Cooking Time:

  • 30 minutes

Instructions:

  1. Roast the Vegetables: Preheat your oven to 200°C (400°F). On a greased baking tray, arrange the pumpkin (cut side up), carrot chunks, and garlic cloves. Drizzle with olive oil and sprinkle with a pinch of salt. Cover loosely with aluminum foil and roast for about 20-30 minutes, or until the vegetables are tender. If you don’t have an oven, you can roast them in a wok, stirring frequently until softened.

  2. Blend the Soup: Once the vegetables are roasted, transfer them to a blender. Add the vegetable stock, milk, cinnamon powder, brown sugar, and a bit more salt and pepper. Blend the mixture into a smooth puree, adding water or additional milk to adjust the consistency as desired.

  3. Heat and Serve: Pour the blended soup into a pot and heat gently. Taste for seasoning, adjusting salt and pepper to suit your preference. For an extra touch of spice, you can add a dash of crushed black pepper just before serving.

  4. Serving Suggestion: Serve this soup warm, topped with a sprinkle of black pepper. For a complete meal, pair with a Couscous Salad with Raw Mangoes and Focaccia Bread with Cherry Tomatoes, Basil Pesto, and Goat Cheese for a satisfying lunch or dinner.

This Spicy Roasted Pumpkin Carrot Soup is perfect for chilly days, offering a comforting and flavorful option that’s both filling and nourishing.
