Instructions

Step 1: Prepare the Beet-Carrot Filling

  1. Wash and peel the carrots and beetroot. Grate them finely and set aside.
  2. In a mixing bowl, combine grated beetroot, grated carrots, finely chopped onions, coriander leaves, and green chillies.
  3. Squeeze in the juice of half a lemon and season with salt to taste. Mix everything thoroughly. Set this vibrant filling aside.

  1. In a blender, add fresh coriander leaves, mint leaves, green chillies, and garlic.

  1. Lay out one thattai on a clean surface. Spread a thin layer of green chutney on one side.
  2. On another thattai, spread the red chutney on one side.
  3. Place a generous spoonful of the beet-carrot filling onto one of the thattai. Optionally, sprinkle roasted peanuts or spiced boondi over the filling for added texture.
  4. Carefully sandwich the two thattais together, ensuring the chutneys face inward.
  5. Repeat the process for the remaining thattai and filling.
