Gabus Asin Sambal Pete

Experience the delightful fusion of flavors with Gabus Asin Sambal Pete, a savory Indonesian dish that combines crispy salted fish with the unique taste of petai (stink beans). This recipe will guide you through creating a dish that’s bursting with freshness and umami, perfect for any meal.

Ingredients

  • 250 grams petai (stink beans), halved
  • 100 grams salted gabus fish (snakehead fish)
  • 10 cloves shallots
  • 1 clove garlic
  • 5 bird’s eye chilies (cabai rawit)
  • 1 red chili
  • 2 tomatoes
  • Juice of 1 jeruk limo (limau)
  • 1 teaspoon sugar
  • Royco chicken seasoning, to taste
  • Salt, to taste
  • 5 tablespoons cooking oil

Preparation Steps

  1. Prepare the Petai: Start by peeling the petai and cutting them in half. Set aside for later use.

  2. Soak the Fish: Soak the salted gabus fish in hot water for about 5 minutes to soften. Drain and set aside.

  3. Fry the Fish: Heat oil in a pan and fry the salted fish until crispy. Once done, remove from the pan and let it drain on a paper towel to absorb excess oil.

  4. Blend the Ingredients: In a blender or food processor, coarsely grind the shallots, garlic, bird’s eye chilies, red chili, and tomatoes. This mixture will form the flavorful base of your dish.

  5. Sauté the Petai: In the same pan, add a bit more oil if necessary (about 5 tablespoons), then sauté the petai for a few minutes. Add the blended spice mixture to the pan.

  6. Combine and Season: Add the fried salted fish to the pan. Season with salt, sugar, and Royco chicken seasoning to taste. Mix well to ensure the fish and petai are coated with the spices.

  7. Finish with Lime Juice: Finally, squeeze the juice of the jeruk limo over the dish and stir gently. Remove from heat and transfer to a serving dish.

Serving Suggestions

Serve Gabus Asin Sambal Pete warm, ideally with steamed rice, to enhance the meal’s flavors. This dish brings together the saltiness of the fish with the earthy taste of petai, creating a wonderful harmony that is both satisfying and memorable. Enjoy your culinary adventure with this vibrant Indonesian delight!
