Title: Salted Snakehead Fish and Stink Beans Stir-Fry
Ingredients:
- 100 grams salted snakehead fish, cut into pieces
- 1 board stink beans (petai), split
- 4 shallots, sliced
- 2 cloves garlic, sliced
- 3 large green chilies, sliced
- 1 tomato, cut into wedges
- 8 red bird’s eye chilies, whole
- 2 tablespoons sambal sauce
- 1 piece galangal, bruised
- 1 sprig curry leaves
- A pinch of salt
- 50 ml water
Steps:
- Begin by soaking the salted snakehead fish in hot water until cool. Drain and then fry until crispy.
- Sauté shallots and garlic in a little oil until fragrant. Add green chilies, tomato, curry leaves, galangal, and stir briefly. Add stink beans, sambal sauce, and water. Stir until the sauce thickens.
- Serve hot.
