- 3 curly red chilies
- 3 cloves of garlic
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/2 teaspoon chicken stock powder (I used R.Y.C.)
- 1 key lime
- Cooking oil as needed
- Fresh vegetables for garnish as desired

- Ensure you have crispy fried chicken ready. You can refer to the previous recipe for crispy fried chicken if needed.

Prepare the Sambal (Chili Sauce):
- Heat a little oil in a pan. Fry the red bird’s eye chilies, curly red chilies, and garlic briefly until they wilt slightly. Be careful not to overcook them.
- Remove from heat and drain the excess oil.
- Coarsely grind the fried chilies and garlic using a mortar and pestle.
- Add salt, sugar, and chicken stock powder to the mixture. Adjust the seasoning to taste.
- Squeeze the juice of one key lime into the sambal mixture for a fresh, tangy flavor.

- Place the prepared sambal on top of the crispy fried chicken.
- Lightly crush the chicken with the sambal to blend the flavors.
