Perfect for serving with warm rice, this dish combines aromatic spices and zesty ingredients for a comforting and satisfying meal.
Ingredients:
- 1 whole bandeng presto (pressure-cooked milkfish) – you can substitute with another type of fish if preferred
- 2 tablespoons cooking oil
- 50 ml water
For the Sambel (Sauce):
- 1 clove garlic
- 1 small shallot
- 1 tomato
- 3 tablespoons tomato sauce
- 1 tablespoon sweet soy sauce (kecap manis)
- Fresh bird’s eye chilies (cabe rawit), to taste
- Salt, to taste
- Seasoning (optional)
Instructions:
-
Prepare the Bandeng:
- Start by using 1 whole bandeng presto. If bandeng is not available, you can use another type of fish. The pressure-cooked bandeng will provide a tender and flavorful base for the sambel.
-
Make the Sambel:
- Blend or grind the following ingredients to a smooth paste: garlic, shallot, and tomato. You can use a blender or a mortar and pestle, depending on your preference.
- Heat the cooking oil in a pan over medium heat. Add the blended sambel paste and sauté until fragrant.
- Add the 50 ml of water to the pan and continue cooking. Allow the sambel to simmer until it starts to bubble and the oil begins to separate from the paste.
-
Cook the Bandeng:
- Gently place the bandeng presto into the pan with the sambel. Let it cook for about 2 minutes to absorb the flavors, then remove from heat.
-
Serve:
- Transfer the sambel bandeng to a serving dish and enjoy it hot with freshly steamed rice.
Notes:
- This recipe yields one serving. For larger quantities, simply adjust the amount of sambel ingredients accordingly.
- Feel free to adjust the level of spiciness by varying the amount of bird’s eye chilies based on your taste preference.
Enjoy the rich, aromatic flavors of this sambel bandeng, a true testament to the vibrant and diverse culinary traditions of Indonesia.
