Spicy Sardine & Egg Skillet Delight
Title: Sardine and Fried Egg Delight
Ingredients:
- 3 large eggs (beaten)
- 1 can of spicy sardines
- 3 cloves garlic (chopped)
- 3 shallots (finely diced)
- 1 handful of green peas
- 3 small red chili peppers
- 3 green chili peppers
- 150 ml warm water
- Margarine (for frying)
- 1 teaspoon salt
- 1 teaspoon sweet soy sauce (optional)
- 1 teaspoon chili powder
- 1 teaspoon ground black pepper
Instructions:

Fry the Eggs:
Heat margarine in a frying pan over medium heat. Pour in the beaten eggs, forming five small rounds. Cook until the eggs are golden and crispy on the edges. Remove from the pan and drain on paper towels. -
Prepare the Sauce:
In the same pan, add a bit more margarine if needed. Sauté the garlic, shallots, and red chili peppers until fragrant. Add the green peas and 50 ml of warm water. Stir and cook for a couple of minutes. -
Add the Sardines:
Stir in the sardines, making sure to mix well. Adjust the seasoning with salt and chili powder. Pour in the remaining 100 ml of warm water and bring to a gentle boil. -
Combine with Eggs:
Carefully add the fried eggs to the pan. Gently stir to combine, allowing the flavors to meld together. Cook for a few more minutes until the eggs have absorbed some of the sauce. -
Serve:
Transfer to a serving dish and enjoy warm. This dish pairs wonderfully with steamed rice or as a hearty addition to a larger meal.
