Sarden and Fried Egg Stir-Fry: Fe’s Style

Ingredients:

  • 1 large can of mackerel sardines
  • 3 eggs, fried
  • 5 shallots, thinly sliced
  • 3 cloves of garlic, thinly sliced
  • 5 red bird’s eye chilies, sliced diagonally
  • 5 green curly chilies, sliced diagonally
  • 1 bay leaf, crumpled
  • 1 slice of galangal, smashed
  • 1 slice of ginger, smashed
  • 1 tablespoon of sliced palm sugar (or brown sugar)
  • 100 ml of water
  • Olive oil for sautéing

Instructions:

  1. Prepare the Sardines: Open the can of large mackerel sardines and set it aside. Using a large can is recommended as it contains larger fish pieces, which enhance the dish’s texture and flavor.

  2. Sauté the Aromatics: In a pan, heat a small amount of olive oil over medium heat. Add the thinly sliced shallots and garlic, along with the crumpled bay leaf, smashed galangal, and ginger. Sauté until fragrant and golden brown, allowing the flavors to develop.

  3. Add the Chilies and Seasoning: Incorporate the sliced red and green chilies into the pan. Stir for a minute to release their aroma. Pour in the water and add the sliced palm sugar. Stir well to dissolve the sugar and combine the flavors.

  4. Adjust Seasoning: Taste the sauce and adjust the seasoning. The sardines are already salted, so you may not need additional salt. If desired, add salt or seasoning to taste. Feel free to include any additional flavorings like seasoning powder if preferred.

  5. Combine the Sardines and Eggs: Add the entire contents of the sardine can to the pan. Stir gently to mix the sardines with the aromatic sauce. Carefully place the fried eggs into the pan, ensuring they remain intact. Stir gently to coat the eggs with the sauce, allowing them to absorb the flavors.

  6. Simmer and Reduce: Continue to cook, stirring occasionally, until the sauce has reduced and thickened, and the flavors have melded together. The sauce should be well absorbed by the sardines and eggs.

  7. Serve: Once the sauce has thickened and the flavors have developed, turn off the heat. Serve the sardine and egg stir-fry hot, accompanied by steamed rice and crackers for a satisfying meal. Enjoy!
