Spicy Sardine Tomato Stew

Ingredients:

  • 1 can of sardines (brand of your choice; I used Sasa)
  • 7 bird’s eye chilies
  • 3 curly chilies
  • 2 cloves of garlic
  • 1/2 onion
  • 1 tomato
  • Salt, pepper, sugar, and seasoning to taste
  • Water, as needed
  • Oil for sautéing

Instructions:

  1. Prepare the Ingredients:

    • Slice the garlic, onion, chilies, and tomato into thin pieces.
  2. Sauté the Aromatics:

    • Heat a generous amount of oil in a pan over medium heat.
    • Add the sliced garlic, onion, and chilies to the pan. Sauté until they start to soften and become fragrant.
  3. Add the Tomato:

    • Once the garlic, onion, and chilies are slightly wilted, add the sliced tomato to the pan. Continue to cook for a few minutes until the tomato begins to break down.
  4. Incorporate the Sardines:

    • Gently add the sardines to the pan. Pour in a small amount of water to help combine the flavors and create a slight broth.
  5. Season the Stew:

    • Bring the mixture to a boil. Season with salt, pepper, sugar, and your preferred seasoning. Adjust the seasoning to taste.
  6. Simmer and Serve:

    • Allow the stew to simmer until it reaches your desired consistency and the flavors meld together.
    • Give it a final stir, then turn off the heat.
  7. Enjoy:
