Spicy Sardine Tomato Stew
Ingredients:
- 1 can of sardines (brand of your choice; I used Sasa)
- 7 bird’s eye chilies
- 3 curly chilies
- 2 cloves of garlic
- 1/2 onion
- 1 tomato
- Salt, pepper, sugar, and seasoning to taste
- Water, as needed
- Oil for sautéing
Instructions:
-
Prepare the Ingredients:
- Slice the garlic, onion, chilies, and tomato into thin pieces.
-
Sauté the Aromatics:
- Heat a generous amount of oil in a pan over medium heat.
- Add the sliced garlic, onion, and chilies to the pan. Sauté until they start to soften and become fragrant.
-
Add the Tomato:
- Once the garlic, onion, and chilies are slightly wilted, add the sliced tomato to the pan. Continue to cook for a few minutes until the tomato begins to break down.
-
Incorporate the Sardines:
- Gently add the sardines to the pan. Pour in a small amount of water to help combine the flavors and create a slight broth.
-
Season the Stew:
- Bring the mixture to a boil. Season with salt, pepper, sugar, and your preferred seasoning. Adjust the seasoning to taste.
-
Simmer and Serve:
- Allow the stew to simmer until it reaches your desired consistency and the flavors meld together.
- Give it a final stir, then turn off the heat.
-
