Spicy Sardines (Sarden Pedas)

Ingredients

  • 1 can sardines (I used ABC brand)
  • 3 cloves garlic, minced
  • 5 shallots, thinly sliced
  • 1 stalk green onion, chopped
  • 1 small piece ginger (about 3 cm), smashed
  • 1 small tomato, diced
  • 5 red chilies, sliced
  • 3 bird’s eye chilies, sliced

Instructions

  1. Prepare the Ingredients: Begin by preparing your ingredients. Slice the red chilies, shallots, and tomato, then set them aside. Smash the ginger to release its flavor.

  2. Sauté the Aromatics: In a pan, heat some oil over medium heat. Add the minced garlic and sauté until fragrant. Next, add the sliced shallots and cook until they turn golden brown.

  3. Add the Vegetables: Incorporate the sliced red chilies, diced tomato, and smashed ginger into the pan. Stir-fry until all the ingredients are soft and aromatic.

  4. Prepare the Sardines: While waiting for the spices to cook, open the can of sardines and have them ready to go.
