Oseng Hati Ayam Pedas (Spicy Sautéed Chicken Liver)

Ingredients:

  • 1/2 kg chicken liver (hati ayam)
  • 15 red bird’s eye chilies (cabai rawit merah)
  • 5 shallots (bawang merah)
  • 2 large cloves garlic (bawang putih besar)
  • 1 thumb-sized piece of galangal (lengkuas)
  • 2 bunches of basil leaves (daun kemangi)
  • Salt to taste (secukupnya garam)
  • Cooking oil (secukupnya minyak goreng)
  • Sweet soy sauce (kecap manis) to taste (secukupnya)

Instructions:

  1. Prepare the Chicken Liver: Begin by slicing the chicken liver into two pieces each. Heat some oil in a frying pan over medium heat. Fry the liver pieces until they are half-cooked. Once done, remove them from the pan and drain on paper towels.

  2. Prepare the Aromatics: While the liver is frying, finely slice the red bird’s eye chilies, shallots, garlic, and galangal. Heat a little oil in a pan over medium heat and sauté these ingredients until they release their fragrant aroma.

  3. Combine Ingredients: Add the partially cooked chicken liver to the pan with the sautéed aromatics. Stir to combine and cook for a few minutes.

  4. Season the Dish: Season with salt and sweet soy sauce to taste. Continue to cook until the liver is fully cooked and has absorbed the flavors.

  5. Add Basil: Just before serving, add the basil leaves and toss them through the mixture until they are wilted and aromatic.
