Sautéed Mackerel with Spicy Aromatics (Tumis Ikan Kembung)

Ingredients:

  • 5 mackerel fish, cleaned and flattened
  • 6 shallots
  • 1 garlic clove
  • 1 onion
  • 5 bird’s eye chilies
  • 10 large green chilies
  • 1 tomato
  • Fish seasoning mix

Instructions:

  1. Prepare the Fish: Rinse the mackerel fish thoroughly, then coat them with the fish seasoning mix. Allow the fish to marinate for a few minutes. Heat oil in a pan and fry the fish until they are crispy and golden brown. Remove the fish from the pan and set aside.

  2. Prepare the Aromatics: Slice the shallots, garlic, onion, bird’s eye chilies, and large green chilies. Dice the tomato.

  3. Sauté the Aromatics: In the same pan used for frying the fish, heat some oil. Add the shallots, garlic, and onion, and sauté until they become fragrant and translucent.

  4. Add Chilies: Incorporate the bird’s eye chilies and large green chilies into the pan. Continue to sauté until the chilies become tender and aromatic.

  5. Add Tomato: Stir in the diced tomato and cook for a few more minutes until the tomato softens and the flavors meld together.

  6. Combine and Serve: Arrange the crispy mackerel fish on a serving plate. Spoon the sautéed aromatics and spicy mixture over the top of the fish. Serve immediately and enjoy!
