1 Egg
1 1/2 Cups cornflake crumbs
3/4 Cup cornmeal mix

Instructions

  1. Prepare Jalapenos:

    • Cut the jalapeno peppers in half lengthwise and remove the seeds. It’s recommended to wear plastic gloves to protect your hands from the jalapeno oils.
    • In a large saucepan, bring water to a boil and blanch the peppers for 5 minutes.
    • Drain the peppers and rinse them with cold water. Then, drain them on paper towels.
  2. Prepare Filling:

    • In a mixing bowl, combine the cream cheese, chopped shrimp, lump crab meat, chopped onions, Worcestershire sauce, lemon juice, and garlic powder. Beat the mixture until well blended.
    • Transfer the filling mixture into a quart-size resealable bag. Cut off one corner of the bag to create a piping bag.
  3. Stuff and Freeze Jalapenos:

    • Pipe the cream cheese and seafood mixture into each jalapeno half.
    • Place the stuffed jalapenos on a baking sheet lined with wax paper and freeze them for about 1 hour, or until the filling is frozen.
  4. Coat Jalapenos:

    • In a small bowl, whisk together the egg and buttermilk.
    • In a separate medium bowl, mix the cornflake crumbs and cornmeal mix.
    • Dip each frozen jalapeno in the buttermilk mixture, then roll it in the crumb mixture until evenly coated.
    • Return the coated jalapenos to the baking sheet, cover, and freeze for an additional hour.
  5. Fry Jalapenos:

    • Heat oil in a deep fryer or large pot to 350°F (175°C).

    • Once fried, transfer the jalapenos to a paper towel-lined plate to drain excess oil.
