Special Egg Omelet (Telur Dadar Istimewa)

Ingredients:

  • 2 large eggs
  • 2 shallots
  • 4 bird’s eye chilies
  • Ground black pepper, to taste
  • Salt, to taste
  • Bon Cabe (or chili seasoning), to taste
  • A small handful of fresh celery leaves
  • 2 tablespoons all-purpose flour

Instructions:

  1. Prepare the Spice Mixture: Begin by finely grinding the shallots and bird’s eye chilies together until you achieve a smooth paste. This mixture will infuse your omelet with a delightful, spicy flavor.

  2. Mix the Ingredients: In a bowl, whisk the eggs until well beaten. Add the ground shallot-chili paste, ground black pepper, salt, Bon Cabe seasoning, and chopped celery leaves. Stir in the all-purpose flour to ensure a light and fluffy texture.

  3. Cook the Omelet: Heat a non-stick skillet over low heat and lightly grease it. Pour the egg mixture into the skillet and cook slowly, allowing the edges to set before gently lifting the omelet with a spatula to allow the uncooked egg to flow underneath. Continue cooking until the omelet is fully set and golden brown on both sides.

  4. Serve: Once cooked, transfer the omelet to a serving plate. It can be enjoyed hot and is perfect as a flavorful side dish or a satisfying main course.

This Special Egg Omelet is a versatile dish that combines the vibrant flavors of shallots and chilies with the richness of eggs. It’s a simple yet delightful recipe that brings a touch of spice to your meal.
