Spicy Shredded Chicken with Basil (Ayam Suwir Kemangi Pedas)
Ingredients:
- 1/4 kg chicken breast fillet
- 3 bunches of basil leaves
- 1 stalk lemongrass (white part only, bruised)
- 1/2 thumb-sized piece of ginger (bruised)
- 1 onion (sliced)
- 3 kaffir lime leaves
- 1 tablespoon sweet soy sauce
- 1 tablespoon oyster sauce
- 3 tablespoons chili sauce (I use Cap 2 Belibis)
- 1 spring onion (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon sugar (white or brown, to taste)
- 1/4 teaspoon chicken bouillon powder
- 50 ml water
- 2 tablespoons cooking oil
Spice Paste:
- 5 red bird’s eye chilies
- 7 red curly chilies
- 5 shallots
- 3 garlic cloves

Cook the Chicken:
- Boil the chicken breast fillet in water for approximately 15-20 minutes until fully cooked. Shred the chicken into bite-sized pieces once cool enough to handle.

Prepare the Spice Paste:
- Blend the red bird’s eye chilies, red curly chilies, shallots, and garlic cloves into a smooth paste. You can use a food processor or mortar and pestle for this.

Sauté the Aromatics:
- Heat the cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant.
- Add the sliced onion, kaffir lime leaves, ginger, and lemongrass. Continue to cook until the onion softens and the mixture is aromatic.

Add Sauces and Seasonings:
- Pour in the water, then add the salt, sugar, chicken bouillon powder, chili sauce, oyster sauce, and sweet soy sauce. Stir well and bring the mixture to a boil. Adjust the seasoning to taste.

Combine Chicken and Sauce:
- Add the shredded chicken to the pan. Stir to coat the chicken with the sauce. Cook until the chicken absorbs the flavors and the sauce reduces slightly.

Add Basil Leaves:
- Add the basil leaves to the pan. Cook until the basil is wilted and well mixed with the chicken.

Finish and Serve:
- Remove from heat. Serve the spicy shredded chicken with warm rice.
