Spicy Shredded Chicken with Basil (Ayam Suwir Kemangi Pedas)

Ingredients:

  • 1/4 kg chicken breast fillet
  • 3 bunches of basil leaves
  • 1 stalk lemongrass (white part only, bruised)
  • 1/2 thumb-sized piece of ginger (bruised)
  • 1 onion (sliced)
  • 3 kaffir lime leaves
  • 1 tablespoon sweet soy sauce
  • 1 tablespoon oyster sauce
  • 3 tablespoons chili sauce (I use Cap 2 Belibis)
  • 1 spring onion (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar (white or brown, to taste)
  • 1/4 teaspoon chicken bouillon powder
  • 50 ml water
  • 2 tablespoons cooking oil

Spice Paste:

  • 5 red bird’s eye chilies
  • 7 red curly chilies
  • 5 shallots
  • 3 garlic cloves

Instructions:

  1. Cook the Chicken:

    • Boil the chicken breast fillet in water for approximately 15-20 minutes until fully cooked. Shred the chicken into bite-sized pieces once cool enough to handle.
  2. Prepare the Spice Paste:

    • Blend the red bird’s eye chilies, red curly chilies, shallots, and garlic cloves into a smooth paste. You can use a food processor or mortar and pestle for this.
  3. Sauté the Aromatics:

    • Heat the cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant.
    • Add the sliced onion, kaffir lime leaves, ginger, and lemongrass. Continue to cook until the onion softens and the mixture is aromatic.
  4. Add Sauces and Seasonings:

    • Pour in the water, then add the salt, sugar, chicken bouillon powder, chili sauce, oyster sauce, and sweet soy sauce. Stir well and bring the mixture to a boil. Adjust the seasoning to taste.
  5. Combine Chicken and Sauce:

    • Add the shredded chicken to the pan. Stir to coat the chicken with the sauce. Cook until the chicken absorbs the flavors and the sauce reduces slightly.
  6. Add Basil Leaves:

    • Add the basil leaves to the pan. Cook until the basil is wilted and well mixed with the chicken.
  7. Finish and Serve:

    • Remove from heat. Serve the spicy shredded chicken with warm rice.
