Kembung Suwir with Sambal Korek

This delightful and spicy dish of shredded mackerel (Kembung Suwir) combined with fiery sambal korek is a must-try for fans of bold, Indonesian flavors. The tanginess of lime and the heat of the sambal make this dish a crowd-pleaser, perfect for serving with a side of steamed rice or as a flavorful addition to your meal. Let’s dive into the recipe!

Ingredients:

Ingredient Amount
Mackerel (Ikan Kembung) 500 grams
Lime (Jeruk Nipis) 1 piece
Salt To taste
Sambal Korek Ingredients:
Curly Red Chili (Cabai Keriting) 7 pieces
Bird’s Eye Chili (Cabai Rawit Merah) 10 pieces
Garlic 4 cloves
Salt To taste
Sugar To taste

Instructions:

  1. Prepare the Fish:

    • Begin by cleaning the mackerel thoroughly and pat it dry.
    • Squeeze the juice of one lime over the fish to eliminate any fishy smell and to add a subtle tang.
    • Season the fish with a generous sprinkle of salt, ensuring all sides are well coated.
  2. Fry the Fish:

    • Heat oil in a pan over medium heat.
    • Fry the mackerel until it’s golden and cooked through, about 4-5 minutes per side, depending on the size of the fish.
    • Once done, remove from the oil and let it cool slightly.
    • Shred the fish into small pieces, removing the bones. Set aside.
  3. Make the Sambal Korek:

    • In a mortar and pestle (or a food processor), coarsely grind the curly red chilies, bird’s eye chilies, and garlic.
    • Season with salt and sugar according to taste.
  4. Combine the Sambal and Fish:

    • Heat a small amount of oil in a pan until hot, then pour the hot oil over the sambal mixture to release its flavors.
    • Stir the sambal well, then add the shredded mackerel to the sambal and mix until everything is evenly coated.
  5. Final Touch:

    • To elevate the dish, drizzle some more lime juice over the fish and sambal mixture just before serving to add a fresh citrus kick.

Serving Suggestions:

Serve the Kembung Suwir with Sambal Korek alongside a bowl of steamed rice, and perhaps a side of fresh vegetables or crispy fried tempeh for a balanced meal.

Enjoy this simple yet delicious dish that packs a punch with every bite!
