Pindang Tongkol Suwir Pedas

Ingredients

  • 2 packets of pindang tongkol fish, shredded

For the Ground Spice Paste:

  • 2 cloves garlic
  • 1 piece of ginger (about 1 inch)
  • 2 pieces of turmeric (about 1 inch)
  • 5 curly red chilies
  • 10 bird’s eye chilies (red)

For Whole Spices:

  • 2 kaffir lime leaves
  • 1 stalk lemongrass (lightly smashed)
  • 2 pieces of galangal (lightly smashed)
  • 5 shallots (thinly sliced)

Steps

  1. Prepare the Base: In a pan, heat some oil over medium heat. Add the sliced shallots and sauté until they become fragrant. Then, incorporate the ground spice paste along with the kaffir lime leaves, smashed lemongrass, and galangal. Continue to sauté until the spices are cooked through and aromatic.

  2. Add the Fish: Gently add the shredded pindang tongkol fish into the pan. Stir well to ensure the fish is evenly coated with the spices.

  3. Season: Sprinkle in salt, a dash of chicken seasoning (such as Masako Ayam), and a little sugar to balance the flavors. Mix thoroughly.

  4. Cook Through: Allow the dish to cook until the fish is thoroughly heated and the spices have fully penetrated the fish. This process helps the flavors meld beautifully.

  5. Serve: Once the fish is well-cooked and the spices have absorbed, remove from heat. Serve hot with steaming white rice for a delightful meal.
