Ingredients

For the Tuna:

  • 2 medium tuna fish (ikan tongkol), cleaned and filleted

Spice Blend:

  • 3 cloves garlic
  • 5 shallots
  • 3 red chilies
  • 5 bird’s eye chilies (cabe rawit)
  • 1 ripe tomato
  • 1 small piece of turmeric (kunyit)
  • 2 candlenuts (kemiri)

Additional Ingredients:

  • 1 small piece of ginger (geprek)
  • 3 kaffir lime leaves (daun jeruk)
  • 1 stalk of lemongrass (serei)
  • A handful of Thai basil leaves (daun kemangi)
  • Sugar, to taste
  • Salt, to taste
  • Royco seasoning, to taste

Instructions

  1. Shred the Tuna: Begin by using your hands to shred the filleted tuna into bite-sized pieces. This will help the fish absorb the flavors of the spices better.

  2. Prepare the Spice Paste: In a blender or food processor, combine the garlic, shallots, red chilies, bird’s eye chilies, tomato, turmeric, and candlenuts. Blend until you achieve a smooth paste.

  3. Sauté the Spice Paste: In a pan over medium heat, add a little oil and sauté the blended spice paste until fragrant. This will enhance the flavors and aromas of the dish.

  4. Add Aromatics: Incorporate the kaffir lime leaves, lemongrass, ginger, salt, sugar, and Royco seasoning into the pan. Taste and adjust the seasoning to your preference, stirring well to combine.

  5. Combine with Tuna: Once the spice paste is aromatic, add a splash of water and carefully incorporate the shredded tuna into the pan. Stir gently to coat the tuna with the spices.

  6. Simmer and Serve: Allow the mixture to simmer, letting the spices infuse into the tuna for about 10-15 minutes, until the flavors meld beautifully. Add the Thai basil leaves just before serving for an extra burst of freshness.

Serve your Shredded Spicy Tuna with steamed rice for a complete meal that showcases the rich and vibrant flavors of Indonesian cuisine. Enjoy every bite of this flavorful dish that embodies love and tradition in every spoonful!
