Shredded Spiced Tuna (Tongkol Suwir / Pampis)

Ingredients

Fresh Tuna (Tongkol) 2 pieces
Shallots 15 cloves
Bird’s Eye Chilies (adjust to taste) As desired
Green Chilies (or Gendot Chilies) As desired
Lemongrass (bruised) 1 stalk
Bay Leaves 2 leaves
Sugar To taste
Salt To taste
Seasoning (optional) To taste
Ground Pepper To taste

Steps

  1. Prepare the Tuna:
    Begin by frying the fresh tuna (tongkol) until it’s cooked through and slightly crispy. Once it’s cooled, shred the tuna using a fork to make it easier.

  2. Sauté the Aromatics:
    Finely chop the shallots and chilies. Crush the lemongrass stalk with the back of a knife to release its flavor. In a pan, heat some oil and sauté the shallots, chilies, and lemongrass until fragrant.

  3. Add Seasonings:
    Once the aromatics are fragrant, add the bay leaves, sugar, salt, seasoning (if using), and ground pepper to the pan. Stir well, and continue to cook the mixture until everything is well combined.

  4. Combine with Tuna:
    Add the shredded tuna into the pan, stirring everything together. Sauté until the tuna absorbs the flavors and the mixture is slightly dry. Taste and adjust the seasoning to your preference.

  5. Final Touches:
    Cook for a few more minutes until the mixture is dry but still tender. Remove from heat, and your spiced shredded tuna (Tongkol Suwir) is ready to serve! Don’t forget to give it a final taste to ensure the seasoning is just right.
