Instructions

  1. Prepare the Tuna:

    • Clean the tuna thoroughly and remove any excess moisture.
    • Squeeze fresh lime juice over the fish and let it sit for 5 minutes. This will help remove any unwanted fishy odor and add a slight tanginess.
  2. Steam the Tuna:

    • Steam the fish for about 10 minutes until it’s fully cooked and tender.
    • Once cooked, allow it to cool slightly before shredding the fish into bite-sized pieces.
  3. Slice the Aromatics:

    • Thinly slice the lime leaves, and cut the bird’s eye chilies in half lengthwise. This will release their heat and flavor into the dish.
  4. Prepare the Spice Paste:

    • Using a mortar and pestle or a blender, grind the shallots, garlic, red chilies, and galangal into a smooth paste.
  5. Stir-fry the Aromatics and Spice Paste:

    • In a heated pan with a bit of oil, sauté the spice paste until it becomes fragrant.
    • Add the sliced lime leaves, bird’s eye chilies, bay leaves, and bruised lemongrass to the pan, allowing the flavors to infuse.
  6. Season and Add the Tuna:

    • Stir in the granulated sugar, salt, and flavor enhancer to taste.
    • Add the shredded tuna to the pan and mix everything together, ensuring the tuna is evenly coated with the aromatic spices.
  7. Adjust Seasoning:

    • Taste the dish and adjust the seasoning as needed, adding more salt, sugar, or lime juice for balance.
  8. Serve:

    • Tongkol Granat is now ready to be served! This flavorful dish pairs perfectly with steamed rice and is best enjoyed with loved ones.

Serving Suggestions
