Spicy Shrimp, Tempeh, and Fish in Balado Sauce

Ingredients

  • 1 piece tempeh
  • ¼ pound shrimp, cleaned and deveined
  • ¼ pound dencis fish (or similar white fish)
  • 3 shallots
  • 2 cloves garlic
  • ½ ounce red chili peppers (adjust to taste)
  • 1 tomato, chopped
  • Salt, to taste
  • Sugar, to taste
  • Water, as needed
  • Oil, for frying

Instructions

  1. Prepare the Fish: Begin by frying the dencis fish in hot oil until it’s crispy and golden brown. Once cooked, carefully remove the fish from the oil and set aside on a plate lined with paper towels to absorb excess oil.

  2. Make the Spice Paste: In a blender or food processor, combine the shallots, garlic, red chili peppers, and chopped tomato. Blend until you achieve a smooth paste. This aromatic mixture is the heart of your sambal balado.

  3. Sauté the Paste: In a skillet, heat a little oil over medium heat. Add the blended spice paste and sauté until fragrant, stirring occasionally to prevent sticking. This should take about 5-7 minutes, releasing the delightful aromas.

  4. Add Shrimp and Tempeh: Once the paste is fragrant, add the shrimp to the skillet. Stir well to coat the shrimp in the spice mixture. Next, introduce the sliced tempeh, mixing everything together to ensure even distribution of flavors.

  5. Combine with the Fish: Gently fold in the fried dencis fish into the skillet, being careful not to break the fish apart.

  6. Season and Simmer: Season the dish with salt and sugar according to your taste preferences. Add a splash of water to create a bit of sauce, then stir everything together. Allow the mixture to simmer until everything is fully cooked and the shrimp turns pink, about 5-7 minutes.
