Tumis Tahu Udang: A Delicious Stir-Fry with Shrimp and Tofu

Ingredients:

  • 1/4 kg shrimp (about 10 pieces)
  • 10 pieces of white tofu, cut into small cubes and lightly fried
  • 20 green chilies, sliced
  • 4 shallots, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 2 tomatoes, chopped
  • 1 stalk lemongrass, white part only, bruised
  • 1 thumb-sized piece of galangal, bruised
  • 1 thumb-sized piece of ginger, bruised
  • 2 bay leaves
  • Salt, to taste
  • Brown sugar, to taste
  • Granulated sugar, to taste
  • Sweet soy sauce (kecap manis), to taste
  • Oyster sauce, to taste
  • Cooking oil, for sautéing
  • Water, as needed

Instructions:

  1. Sauté Aromatics: Heat a generous amount of oil in a pan over medium heat. Add the sliced shallots and garlic, and sauté until fragrant and golden brown.

  2. Add Flavorings: Incorporate the green chilies, lemongrass, galangal, ginger, and tomatoes into the pan. Stir well to combine and cook for a few minutes until the tomatoes start to soften.

  3. Cook Shrimp: Add the shrimp to the pan. Stir frequently until the shrimp turns pink and opaque.

  4. Add Tofu: Gently stir in the fried tofu cubes. Pour in enough water to just cover the ingredients. Bring to a boil.

  5. Season the Dish: Season with salt, brown sugar, sweet soy sauce, and oyster sauce. Mix thoroughly to ensure the tofu and shrimp are well-coated with the seasonings.

  6. Adjust Sweetness: Add granulated sugar to taste. Adjust the seasoning according to your preference.

  7. Serve: Once the dish is well-flavored and heated through, remove from heat. Serve hot and enjoy!
