Salt ½ tsp
Chicken seasoning (Royco) ½ tsp
Water 50 ml
Bird’s eye chilies (optional) 10 pieces

Instructions

  1. Prepare the Tofu: Cut the tofu into bite-sized pieces and fry until they are half-crispy. Set aside to drain excess oil.

  2. Blend the Spices: In a blender, combine the red curly chilies, large red chilies, garlic, shallots, and small tomato to create a smooth paste. Reserve the bay leaves, kaffir lime leaves, and galangal for later.

  3. Sauté the Mixture: Heat enough oil in a pan and sauté the spice paste until it becomes fragrant. Add the bay leaves, kaffir lime leaves, and the crushed galangal, stirring for an additional minute.

  4. Cook the Shrimp: Add the shrimp to the pan, cooking until they start to turn pink. Then gently incorporate the fried tofu, stirring briefly to combine.

  5. Season the Dish: Sprinkle in the salt, sugar, and Royco seasoning. Pour in 50 ml of water and cook for about 5 minutes, allowing the flavors to meld.
