Sambal Shrimp, Beef Liver & Potatoes
Ingredients
- 300 grams of shrimp, head removed
- 250 grams of beef liver, diced
- 3 potatoes, diced
- 1 large onion, sliced
- 1 shallot, sliced
- 1 tablespoon granulated sugar
- Salt to taste
For the Spice Paste:
- 25 red chilies
- 2 cloves of garlic
- 6 shallots
- 3 large tomatoes
- Water as needed

Preparation:
- Begin by slicing the large onion and shallot.
- Blend all the spice paste ingredients (red chilies, garlic, shallots, tomatoes, and water) into a smooth paste.

Cooking Steps:
- Clean the shrimp thoroughly and set aside.
- Boil the diced beef liver in boiling water until cooked through. Once done, drain and fry until slightly crispy.
- Dice the potatoes and fry them until golden brown.

Cooking the Dish:
- Heat a bit of oil in a large pan or wok over medium heat.
- Sauté the sliced shallot and onion until fragrant.
- Add the blended spice paste and continue to cook until the oil starts to separate from the paste.
- Season with salt and granulated sugar, adjusting to taste. Continue to cook until the mixture bubbles and thickens.
- Add the shrimp to the pan and cook until they are about halfway done.
- Next, add the fried potatoes and cooked beef liver to the mixture.
- Stir well and cook until everything is well combined and the shrimp are fully cooked.

Serving:
- Once the dish is dry and fully cooked, transfer it to a serving bowl.
- For an added touch of flavor and texture, you can sprinkle fried shallots on top before serving.
